Ingredients for the dough:
  • 1300g cake flour
  • ½ tablespoon baking powder
  • ½ litre orange juice
  • 1 teaspoon sodium bicarbonate
  • 0,5l “Theofilos” olive oil
  • 250g sugar
  • Zest of 1 orange

Filling:
  • 300g coarsely chopped walnuts
  • 50g sesame seeds
  • 50g sugar
  • 2 tablespoons cognac

Syrup:
  • 400g honey
  • 800g sugar
  • 250g glucose
  • 1l water

To sprinkle over before serving:
  • walnuts
  • 100g honey
  • Cinnamon

Sposób przygotowania

Preparation:
1. Mix the baking powder with the flour and dissolve the sodium bicarbonate in the orange juice.
2. In a mixer blend together the sugar with the olive oil, adding the orange zest, orange juice and cognac.
3. Slowly add flour, mixing continuously, until the right consistency to be able to form the biscuits is achieved.
4. Prepare the filling by mixing all the ingredients together.
5. Take a piece of dough, shape it into a flat round or oval biscuit, put around 1 teaspoon of filling in its middle and seal it with another piece of dough on top.
6. Bake the Melomakarona in a preheated oven at 1800 C for around 15-20 minutes.
7. Prepare the syrup – put all the ingredients into a pan and cook until the syrup has a semi-thick consistency.
8. Take the melomakarona out of the oven and pour over the slightly cooled syrup. Drain any excess syrup and finally garnish the biscuits with nuts and honey.
