Greek cuisine at Christmas

Ingredients:- 1kg flour
- 120ml lukewarm water
- 30g dry yeast
- 480ml warm red wine
- 150g dark raisins
- 150g light raisins
- 150g coarsely chopped walnuts
- Orange zest
- Mandarin zest
- 50g pine nuts
- 400g sugar
- 120 ml extra virgin “Theofilos” olive oil for its colour and fragrance
- ¼ teaspoon salt
- 2 teaspoons cinnamon
- ¼ teaspoon ground cloves
Sposób przygotowania
Preparation:First prepare the mash: put 3-4 tablespoons of lukewarm water into a bowl, add the sugar and yeast, cover and set aside for 15 minutes.
Add the salt, the prepared mash, the rest of the water and the wine to the flour. Knead the dough well until firm. Slowly add the olive oil, kneading all the time until completely absorbed. Finally, add the nuts and raisins, the citrus fruit zest and the seasoning and knead in thoroughly. Cover and set aside for around an hour until the dough has risen. On an oiled baking pan, sprinkled with either flour or breadcrumbs, place the dough shaped into an oval loaf (leaving a little dough aside for the cross), make an incision on the surface of the dough in the shape of a cross, cover and set aside in a warm place to rise again for around 30 minutes. The bread should at least double in size. Meanwhile make a cross out of the remaining dough and place it on top of the loaf.
Bake the loaf in a preheated oven at 2300C for around 12 minutes; lower the heat to 1800C and bake for a further 20-25 minutes.
