Greek cuisine at Christmas

Ingredients:- Royal Castle mussels in white wine
- 200ml crème fraîche
- 8 egg yolks
- 50g Royal Castle black caviar
- 100ml dry white wine
- 4 tablespoons of chopped dill
- salt, pepper
- chives to garnish

Preparation:Place the mussels with their marinade into a pan, setting aside around 10 to garnish with later. Add the crème fraîche and bring to the boil on a low heat, mixing all the while. Add the dill and season with salt and pepper. Place the egg yolks in a bowl, add the wine and some salt and pepper and whisk together on a very low heat until the mixture has the consistency of thick cream. Transfer the mussels to a heat resistant dish and pour over the thick sauce, place in a pre-heated oven and grill for 5 minutes.
Garnish with the mussels previously set aside, caviar and chives.
