Ingredients:- 200g Royal Castle caviar
- 100g potatoes
- 100ml crème fraîche
- 100g cold butter
- salt, pepper
- parmesan to make decorative tuilles

Preparation:Cook the peeled potatoes. Place them in a bowl and mix with the cream until they have a creamy consistency.
Towards the end of mixing add the butter and season with salt and pepper. Place some caviar in the bottom of 4 martini glasses, then add a layer of pureed potato and finally some more caviar on the top.
To make the tuilles, place some grated parmesan in a heated non-stick pan. Take the pan off the heat and wait a moment until the parmesan has melted and has cooled. Garnish the caviar with the tuilles.
