Składniki

Sauce:
  • 2 tablespoons of coconut oil
  • 1 chopped onion
  • 5 pieces of chopped lemon grass
  • 3 cloves of chopped garlic
  • 3 chopped chillies (seeds removed)
  • 0.5l dry white wine
  • 700ml tinned tomatoes

Salad:
  • ½ sprig of basil
  • ½ sprig of mint
  • ½ sprig of coriander
  • Juice from half a lime
  • 2 tablespoons of coconut oil

Mussels:
  • 12 St. Jacob’s mussels
  • 4 tablespoons of coconut oil

Sposób przygotowania

Sauce:
Fry all the ingredients in the oil, add the wine and simmer for 10 minutes. Add the tomatoes and cook for a further 20 minutes. Strain through a fine sieve and blend in the mixer. Season with salt and pepper.

Salad:
Mix the mint, basil and coriander leaves together in a bowl, squeeze over the lime juice and coconut oil and season with salt and pepper.

Mussels:
Fry the mussels in a non-stick pan for 3 minutes on each side.

Serve the mussels with the sauce and the salad.
