Składniki
Sauce:- 2 tablespoons of coconut oil
- 1 chopped onion
- 5 pieces of chopped lemon grass
- 3 cloves of chopped garlic
- 3 chopped chillies (seeds removed)
- 0.5l dry white wine
- 700ml tinned tomatoes
Salad:
- ½ sprig of basil
- ½ sprig of mint
- ½ sprig of coriander
- Juice from half a lime
- 2 tablespoons of coconut oil
Mussels:
- 12 St. Jacob’s mussels
- 4 tablespoons of coconut oil
Sposób przygotowania
Sauce:Fry all the ingredients in the oil, add the wine and simmer for 10 minutes. Add the tomatoes and cook for a further 20 minutes. Strain through a fine sieve and blend in the mixer. Season with salt and pepper.
Salad:
Mix the mint, basil and coriander leaves together in a bowl, squeeze over the lime juice and coconut oil and season with salt and pepper.
Mussels:
Fry the mussels in a non-stick pan for 3 minutes on each side.
Serve the mussels with the sauce and the salad.
