Ingredients:- tagliatelle
- 1/2 small pumpkin of approx. 25cm diameter
- 1/2 glass smooth 18% fat cream
- 5 tablespoons butter
- 3 shallots
- 4 tablespoons grated parmesan
- salt, pepper, parsley, nutmeg
Sposób przygotowania
Preparation:Slice the pumpkin flesh into strips or cubes of 2cm in size. In a thick pan melt the butter over a small flame, add the chopped shallots, salt to taste and cook slowly with the lid on for around 10 minutes, making sure that they do not brown. Add the sliced pumpkin and season with a pinch of nutmeg. Cook for a further 15 minutes or until soft. Add the cream, 2 tablespoons of parmesan, 2 tablespoons of chopped parsley, season once more with salt and add pepper. If the sauce is too thick add a little hot water.
Add the pasta cooked al dente to the sauce and after mixing serve on plates and garnish with the remaining parmesan.
