Ingredients :

Dough:
  • 400g flour,
  • 250g butter,
  • 100g icing sugar,
  • 4 egg yolks,
  • 3 teaspoons baking powder,
  • 3 tablespoons cream.
  • 4 egg whites,
  • 100g sugar,
  • 2 level tablespoons potato flour

Banana filling:
  • 5 medium-sized ripe bananas,
  • 5 egg yolks,
  • 1 packet of butter,
  • 3 teaspoons flour,
  • 3 teaspoons potato flour,
  • 1½ glasses milk,
  • 2 tablespoons lemon juice.

Sposób przygotowania

Preparation:
Dough:
Knead the ingredients into a dough and leave in the fridge for 15 minutes.
Beat the egg whites into a froth, add the sugar and potato flour. Divide the dough into two pieces. Roll them out on a baking tray and place the beaten egg whites onto each piece. Place the tray in a preheated oven and bake until the dough turns a golden brown.

Banana filling:
Beat the yolks with the sugar, flour and potato flour, add 3 liquidized bananas and mix together. Add this mixture gradually to warm milk and bring to the boil, mixing all the time.
Grate the butter and gradually add to the cooled banana mixture, then finally add the lemon juice. Spread half the mixture onto one of the previously baked dough pieces and top with sliced banana. Place the second dough piece on the top and spread with the rest of the mixture. Decorate the top with sliced banana and walnuts.
