Ingredients:- 1 lamb’s liver
- Lamb’s intestine
- 150 ml “Theofilos” olive oil
- 2 romaine lettuces, finely chopped
- 10 spring onions, finely chopped
- 1 white onion, finely chopped
- 150g rice
- 3 eggs
- 2 lemons
- 1 sprig of dill
Sposób przygotowania
Preparation:Wash the intestine and liver thoroughly. Turn the intestine inside out and together with the liver place in boiling water. Bring to the boil and then cut into small pieces. Pour the olive oil into a clean pan, add the onion and spring onions and fry until golden brown. Add the liver and intestine and after a short while add the lettuce with the dill. Add salt and pepper and then add 4 glasses of water. Lower the heat and cook slowly. When the mixture begins to come to the boil add the rice. When the rice is cooked take it off the heat. Beat the egg yolks and whites separately, then mix together adding a little freshly squeezed lemon juice. Slowly add water from the soup mixing the eggs quickly all the time so that they merge evenly. Pour into the rest of the soup and stir.
